- 2 teaspoons cornstarch
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 cups fresh mixed berries
Instructions
- Start by preheating your oven to 250°F (120°C). This low temperature is crucial for the long, gentle cooking time which helps in achieving the right texture for your pavlovas.
- In a clean and dry mixing bowl, begin beating the egg whites with an electric mixer on medium speed. You’re looking for soft peaks to form initially. Gradually add the caster sugar to the bowl, one tablespoon at a time, while continuously mixing at high speed. Continue beating until the mixture reaches stiff, glossy peaks.
- Using a spatula, gently fold in the white vinegar, cornstarch, and vanilla extract.
- Spoon dollops of the meringue mixture onto the lined baking sheet to form small nests. Use the back of a spoon to create a slight dip in the center of each nest.
- Carefully place the baking sheet in the preheated oven and bake for 60 to 75 minutes. Once done, turn off the oven but leave the door ajar to allow them to cool completely inside.
- While your pavlovas are cooling, whip the heavy cream until soft peaks form.
- Once the pavlovas have cooled, top each pavlova nest with a dollop of whipped cream and fresh mixed berries.
Notes
Store any leftover pavlova components separately, assembling just before serving to maintain the crispness of the meringue.
