  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh peaches
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar for topping

Instructions

  1. Start by preheating your oven to 350°F (175°C) to get it ready for baking. While the oven heats up, line a baking sheet with parchment paper to create a non-stick surface for your cookies.
  2. In a medium-sized mixing bowl, whisk together the all-purpose flour, baking soda, and salt.
  3. In a large mixing bowl, use a handheld mixer to beat the room temperature unsalted butter, granulated sugar, and packed brown sugar together.
  4. Next, add in the large egg and vanilla extract to your butter mixture.
  5. Gradually add the dry flour mixture into the butter mixture.
  6. Gently fold in the diced fresh peaches using a spatula or wooden spoon.
  7. Using a tablespoon, drop rounded mounds of cookie dough onto the prepared baking sheet, spacing them about two inches apart. In a small bowl, mix together the ground cinnamon and 1/4 cup of granulated sugar and sprinkle it over the cookie dough mounds.
  8. Place the baking sheet in the preheated oven and bake for 12-15 minutes.
