- 1 cup diced fresh peaches

Instructions
- Start by preheating your oven to 350°F (175°C) to get it ready for baking. While the oven heats up, line a baking sheet with parchment paper to create a non-stick surface for your cookies.
- In a medium-sized mixing bowl, whisk together the all-purpose flour, baking soda, and salt.
- In a large mixing bowl, use a handheld mixer to beat the room temperature unsalted butter, granulated sugar, and packed brown sugar together.
- Next, add in the large egg and vanilla extract to your butter mixture.
- Gradually add the dry flour mixture into the butter mixture.
- Gently fold in the diced fresh peaches using a spatula or wooden spoon.
- Using a tablespoon, drop rounded mounds of cookie dough onto the prepared baking sheet, spacing them about two inches apart. In a small bowl, mix together the ground cinnamon and 1/4 cup of granulated sugar and sprinkle it over the cookie dough mounds.
- Place the baking sheet in the preheated oven and bake for 12-15 minutes.
