  • 1/3 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/3 cup whole milk
  • 1 tsp vanilla extract

Instructions

  1. Start by preheating your oven to 350°F (175°C). This will ensure that the cakes bake evenly. Generously grease your muffin tin, making sure every cup is well-coated to facilitate easy release of the cakes once they’re done.
  2. Pour the melted butter evenly into the bottoms of each muffin cup. To create a sweet base, sprinkle brown sugar over the melted butter until each cup is coated. Next, take your sliced peaches and arrange them in a circular pattern atop the brown sugar.
  3. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set the bowl aside for later.
  4. In a separate large bowl, beat the granulated sugar and eggs together until light and fluffy. Stir in the milk and vanilla extract, combining everything well.
  5. Gently fold the dry ingredients into the wet ingredients, mixing until just combined.
  6. Spoon the prepared batter over the arranged peach slices in the muffin tin. Place the muffin tin in the oven and bake for 20 to 25 minutes.
