- 3 ripe peaches, sliced
- 1/3 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 2 large eggs
- 1/3 cup whole milk
- 1 tsp vanilla extract
Instructions
- Start by preheating your oven to 350°F (175°C). This will ensure that the cakes bake evenly. Generously grease your muffin tin, making sure every cup is well-coated to facilitate easy release of the cakes once they’re done.
- Pour the melted butter evenly into the bottoms of each muffin cup. To create a sweet base, sprinkle brown sugar over the melted butter until each cup is coated. Next, take your sliced peaches and arrange them in a circular pattern atop the brown sugar.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set the bowl aside for later.
- In a separate large bowl, beat the granulated sugar and eggs together until light and fluffy. Stir in the milk and vanilla extract, combining everything well.
- Gently fold the dry ingredients into the wet ingredients, mixing until just combined.
- Spoon the prepared batter over the arranged peach slices in the muffin tin. Place the muffin tin in the oven and bake for 20 to 25 minutes.
- Carefully run a knife around the edges of each mini cake to ensure they are released from the muffin tin. Invert the muffin tin onto a baking sheet to drop out each mini cake.
Notes
Ensure your peaches are ripe for maximum flavor. If fresh peaches aren’t available, canned peaches can be used after draining.
