Description
These Peanut Butter Banana Bread Muffins are a delightful treat combining the flavors of bananas and peanut butter. Perfect for breakfast or snacks!
Ingredients
Scale
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 3 medium overripe bananas, mashed
- 1/2 cup creamy peanut butter
- 1/2 cup brown sugar, packed
- 1 large egg
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 tablespoons milk
Instructions
- Start by preheating your oven to 350°F (175°C). This step is critical as it ensures even baking. Next, prepare your muffin tin by lining it with paper cupcake liners. Alternatively, lightly grease each muffin cup.
- In a large mixing bowl, combine your mashed bananas, creamy peanut butter, packed brown sugar, egg, vegetable oil, milk, and vanilla extract. Use a whisk to blend these ingredients together until smooth.
- Whisk together the all-purpose flour, baking soda, salt, and ground cinnamon in a separate bowl.
- Carefully add the dry ingredient mixture into the wet ingredients. Gently stir until just combined.
- Using a spoon or batter scoop, evenly divide the muffin batter among the prepared muffin cups, filling them about 3/4 full. Bake for 18–22 minutes.
- Once baked, remove the muffin tin from the oven and let it cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.
