Deliciously indulgent yet healthy dessert, combining peanut butter, cherry chia jam, and dark chocolate.

- 1 cup fresh or frozen cherries, pitted
- 2 tbsp chia seeds
- 2–3 tbsp honey or maple syrup
- 1/2 cup natural peanut butter
- 2 tbsp coconut oil, melted (divided)
- 1 cup dark chocolate chips
- Pinch of salt
Instructions
- Begin by placing the cherries in a small saucepan over medium heat. Allow them to cook for about 5 minutes, just until they start to soften and release their juices. Once soft, use a fork or masher to lightly crush the cherries, enhancing their flavor and texture. Mix in the chia seeds and honey or maple syrup, stirring the mixture for an additional 2-3 minutes. When the mixture thickens slightly, remove it from the heat and let it cool.
- In a medium-sized bowl, combine the natural peanut butter with 1 tablespoon of melted coconut oil. Add a pinch of salt to elevate the flavors and stir until the mixture is smooth and well-combined.
- To melt the dark chocolate chips, place them in a heatproof bowl with the remaining tablespoon of coconut oil. Use a double-boiler method by setting the bowl over simmering water or opt for microwave intervals, stirring regularly until the chocolate is completely smooth and silky.
- Line a muffin tin with paper liners to ensure easy removal of the cups. Spoon 1 teaspoon of melted chocolate into each liner, gently tilting the tin to coat the bottom evenly. Freeze for about 5 minutes to let the chocolate set slightly.
- Add a teaspoon of the peanut butter mixture followed by a teaspoon of cherry chia jam into each chocolate-coated liner. Top with another layer of the peanut butter mix to encase the jam fully.
- Finally, pour the remaining melted chocolate over each cup to cover the filling completely. Place the muffin tin in the freezer for 15-20 minutes or until the cups are set.

Store the cups in an airtight container in the refrigerator for up to a week to maintain their freshness.
