  • 1 cup fresh or frozen cherries, pitted
  • 2 tbsp chia seeds
  • 23 tbsp honey or maple syrup
  • 1/2 cup natural peanut butter
  • 2 tbsp coconut oil, melted (divided)
  • 1 cup dark chocolate chips
  • Pinch of salt

Instructions

  1. Begin by placing the cherries in a small saucepan over medium heat. Allow them to cook for about 5 minutes, just until they start to soften and release their juices. Once soft, use a fork or masher to lightly crush the cherries, enhancing their flavor and texture. Mix in the chia seeds and honey or maple syrup, stirring the mixture for an additional 2-3 minutes. When the mixture thickens slightly, remove it from the heat and let it cool.
  2. In a medium-sized bowl, combine the natural peanut butter with 1 tablespoon of melted coconut oil. Add a pinch of salt to elevate the flavors and stir until the mixture is smooth and well-combined.
  3. To melt the dark chocolate chips, place them in a heatproof bowl with the remaining tablespoon of coconut oil. Use a double-boiler method by setting the bowl over simmering water or opt for microwave intervals, stirring regularly until the chocolate is completely smooth and silky.
  4. Line a muffin tin with paper liners to ensure easy removal of the cups. Spoon 1 teaspoon of melted chocolate into each liner, gently tilting the tin to coat the bottom evenly. Freeze for about 5 minutes to let the chocolate set slightly.
  5. Add a teaspoon of the peanut butter mixture followed by a teaspoon of cherry chia jam into each chocolate-coated liner. Top with another layer of the peanut butter mix to encase the jam fully.
  6. Finally, pour the remaining melted chocolate over each cup to cover the filling completely. Place the muffin tin in the freezer for 15-20 minutes or until the cups are set.

Store the cups in an airtight container in the refrigerator for up to a week to maintain their freshness.
