- 2 pears, thinly sliced
- 4 oz (120g) Gorgonzola cheese, crumbled
- 1/4 cup (60ml) honey
- 1/4 cup (30g) chopped walnuts
- A handful of arugula leaves
- 1 tbsp olive oil
- Freshly cracked black pepper
- Optional substitutions: Swap Gorgonzola with goat cheese or blue cheese, and use pecans instead of walnuts for a twist.
Instructions
- Start by preheating your oven to 400°F (200°C). Roll out the puff pastry until thin if you’re using it.
- Drizzle olive oil across the base.
- Layer thinly sliced pears, slightly overlapping.
- Sprinkle crumbled Gorgonzola cheese over the pears.
- Bake for about 15-20 minutes until golden and crisp.
- Drizzle honey and top with walnuts and arugula before serving.

Ensure pears are ripe but firm and adjust honey to your taste.
