This Pear & Apple Grilled Cheese with Caramelized Onions is a delightful twist on the classic grilled cheese, perfect for cooler months.

- 4 slices sourdough bread
- 2 tablespoons unsalted butter
- 1 medium onion, thinly sliced
- 1 tablespoon balsamic vinegar
- 1 medium pear, thinly sliced
- 1 medium apple, thinly sliced
- 1 cup shredded sharp cheddar cheese
- Salt and black pepper, to taste
Instructions
- Start by melting one tablespoon of unsalted butter in a skillet over medium heat. Once the butter is melted and sizzling, add the thinly sliced onions along with a pinch of salt. Cooking the onions will take about 10 minutes; during this time, stir occasionally until they turn soft and develop a beautiful golden brown color. After they’re caramelized, add the balsamic vinegar and continue to cook for an additional 2-3 minutes. Once done, remove the onions from the skillet.
- Take two slices of the lightly toasted sourdough bread and layer half of the shredded sharp cheddar cheese. Then, distribute the caramelized onions over the cheese, followed by the sliced apple and pear. Complete the sandwich by sprinkling the remaining cheese and topping with the final two slices of bread.
- Return the skillet to medium heat and melt the remaining tablespoon of butter. Once melted, place the assembled sandwiches in the skillet. Grill for about 4-5 minutes per side until golden brown and crispy.
