  • 200 grams pecans, roughly chopped
  • 150 grams unsalted butter, softened
  • 2 large eggs, beaten

Instructions

  1. Preheat your oven to 175°C (350°F).
  2. In a medium-sized mixing bowl, combine the packed light brown sugar, all-purpose flour, and roughly chopped pecans. Whisk together.
  3. In a separate bowl, beat the softened unsalted butter and the beaten eggs together until creamy.
  4. Gently incorporate the dry ingredients into the wet mixture, stirring until just combined.
  5. Spoon the batter into the prepared muffin cups, filling each roughly two-thirds full.
  6. Bake for 12-13 minutes for mini muffins or 15-17 minutes for regular-sized muffins.
  7. Once baked, run a knife around the edge of each muffin to loosen them gently and allow them to cool on a wire rack.
