  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1/2 tsp smoked paprika (optional)
  • 4 slices provolone cheese
  • 1/4 cup heavy cream
  • 1 tbsp cream cheese
  • Chopped parsley for garnish (optional)

Instructions

  1. Begin by heating the olive oil in a large skillet over medium-high heat. Once the oil shimmers, add your sliced onions and bell peppers. Season them lightly with salt and black pepper. Sauté, stirring occasionally, for about 6 to 8 minutes. The vegetables should become tender and slightly caramelized. Once done, transfer them to a plate and set aside temporarily.
  2. In the same skillet, consider adding a little splash of oil if it appears dry. Toss in the shaved beef, spreading it in a single layer to sear properly. Cook the beef, allowing it to brown and cook through, for approximately 5 minutes. Then, stir in the minced garlic and smoked paprika for an extra touch of flavor, cooking for an additional minute. Once fragrant, return the sautéed vegetables to the skillet and give the mixture a good toss to combine all the flavors.Use a wooden spoon to ensure all bits are mixed thoroughly.
  3. While the beef and veggies are mingling, prepare the creamy provolone cheese sauce. In a small saucepan, combine heavy cream and cream cheese over low heat. Stir constantly to melt and amalgamate the mixture into a smooth consistency. Gradually add the provolone cheese while stirring, until you achieve a silky smooth sauce. It should be thick enough to stick to the back of your spoon.
  4. Divide the beef and veggie mixture evenly between four serving bowls. Drizzle each generously with the provolone cheese sauce. For a finishing touch, garnish with chopped parsley if desired. Serve immediately while everything is still warm and melty.
