  • 1 tablespoon pineapple juice or milk (for glaze, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the eggs, then add melted butter, vanilla extract, and crushed pineapple with juice.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Pour batter into the loaf pan and smooth the top.
  6. Bake for 55 to 65 minutes or until golden brown and a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack.
