- 1 can (8 oz) crushed pineapple with juice
- 1/2 cup powdered sugar (for glaze, optional)
- 1 tablespoon pineapple juice or milk (for glaze, optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the eggs, then add melted butter, vanilla extract, and crushed pineapple with juice.
- Mix the wet ingredients into the dry ingredients until just combined.
- Pour batter into the loaf pan and smooth the top.
- Bake for 55 to 65 minutes or until golden brown and a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
- Optional: Glaze with a mixture of powdered sugar and pineapple juice or milk after cooling.
Notes
Ensure not to drain the pineapple juice, it adds moisture.
