- 1 can (8 oz) crushed pineapple, well-drained
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 cup finely chopped green onions
- 1/2 cup finely chopped pecans
- 1/4 cup finely chopped red or green bell pepper (optional)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- To soften cream cheese, let it sit at room temperature for about 30 minutes.
- Drain the crushed pineapple using a fine mesh strainer to remove excess moisture.
- In a large mixing bowl, combine softened cream cheese, drained pineapple, cheddar cheese, green onions, garlic powder, salt, and black pepper. Mix until well combined.
- Mold the mixture into a ball using plastic wrap, refrigerate for at least 1 hour.
- Optionally, toast pecans in a skillet over medium heat for additional flavor.
- After chilling, roll the cheese ball in toasted pecans to coat.
- Let the cheese ball sit at room temperature for 10 minutes before serving with crackers and vegetables.
