Ingredients

  • 1 can (8 oz) crushed pineapple, well-drained
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup finely chopped green onions
  • 1/2 cup finely chopped pecans
  • 1/4 cup finely chopped red or green bell pepper (optional)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. To soften cream cheese, let it sit at room temperature for about 30 minutes.
  2. Drain the crushed pineapple using a fine mesh strainer to remove excess moisture.
  3. In a large mixing bowl, combine softened cream cheese, drained pineapple, cheddar cheese, green onions, garlic powder, salt, and black pepper. Mix until well combined.
  4. Mold the mixture into a ball using plastic wrap, refrigerate for at least 1 hour.
  5. Optionally, toast pecans in a skillet over medium heat for additional flavor.
  6. After chilling, roll the cheese ball in toasted pecans to coat.
