Description
This delightful dish combines the bright, tropical flavor of pineapple with the creamy richness of cream cheese, all encased in a perfectly baked cobbler.
Ingredients
Scale
- 1 stick (1/2 cup) butter
- 1 egg, lightly beaten
- 1 cup milk
- 1 cup all-purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cans (20 oz each) pineapple chunks, drained
- 8 oz cream cheese, cut into small pieces
Instructions
- Start by preheating your oven to 350°F (175°C). While the oven warms up, place the stick of butter into the 9×13-inch baking dish. Once the oven is ready, slide the dish in and let the butter melt completely.
- In a spacious mixing bowl, combine the lightly beaten egg, milk, all-purpose flour, sugar, baking powder, and salt. Whisk these ingredients together until the mixture is smooth and free of lumps.
- Once your batter is ready, pour it over the melted butter in the baking dish. Be careful not to stir. Gradually spread the batter to ensure it covers the butter evenly.
- Layer the drained pineapple chunks on top of the batter, distributing them evenly. Finally, drop the small pieces of cream cheese on top.
- Place the dish in the oven and bake for approximately 45 minutes. Let the cobbler cool slightly before serving.
Notes
For best results, serve warm straight from the oven to appreciate the gooey texture.
