  • FOR THE CHOCOLATE LAVA CAKE:
  • 1/2 cup (115g) unsalted butter
  • 4 ounces (115g) dark chocolate (60–70%), chopped
  • 2 large eggs
  • 2 large egg yolks
  • 1/3 cup (70g) granulated sugar
  • 1/8 teaspoon salt
  • 2 tablespoons all-purpose flour
  • Cocoa powder for dusting
  • Chopped pistachios for garnish (optional)

Instructions

  1. Prepare the pistachio filling by melting white chocolate with cream, mixing in pistachio paste, and freezing in molds until solid.
  2. Prep the ramekins by greasing with butter and dusting with cocoa powder.
  3. Make the chocolate batter by melting butter and chocolate, whisking eggs with sugar, and folding in flour.
  4. Assemble by layering batter and frozen pistachio discs in ramekins.
  5. Bake for 11-13 minutes and serve warm.
