Pistachio-Crusted Brie Bites with Raspberry Honey Glaze are the epitome of delightful snacking.

- 1 wheel Brie cheese (8 oz / 225 g), cut into 1-inch cubes
- ½ cup crushed pistachios (60 g)
- 1 tbsp olive oil (15 ml)
- 12–16 mini phyllo cups or sturdy crackers
- ¼ cup raspberry preserves (80 g)
- 1 tbsp honey (15 ml)
- 1 tsp lemon juice (5 ml)
- Extra crushed pistachios (optional garnish)
- Fresh thyme or rosemary (optional)
Instructions
- Start by preheating your oven to 350°F (175°C). While it warms, line a baking sheet with parchment paper.
- In a mixing bowl, toss the carefully cut Brie cubes in olive oil. Then, coat each one in the crushed pistachios.
- In a small saucepan over low heat, combine raspberry preserves, honey, and lemon juice.
- Once the Brie-filled phyllo cups are in place, pop your baking sheet into the preheated oven. Bake for about 8 to 10 minutes.
- When the baked Brie bites have reached their perfect state, remove them from the oven and let them cool for a minute. Drizzle each bite generously with the warm raspberry honey glaze.
Notes
You can prep the ingredients in advance and assemble the bites. Just bake them right before serving to ensure they are warm and gooey.
