Instructions

  1. Begin by preparing your loaf pan. Preheat the oven to 350°F (175°C) and take an 8×4-inch loaf pan, greasing it generously with butter or cooking spray. To further prevent sticking, line the bottom with parchment paper, allowing for easy removal once baked.
  2. In a medium bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk these dry ingredients together until well combined.
  3. In a large mixing bowl, beat the softened unsalted butter alongside the granulated sugar using an electric mixer or a whisk until the mixture becomes light and fluffy.
  4. Add the eggs to the butter and sugar mixture one at a time, ensuring each egg is fully blended before adding the next. Then, mix in the vanilla extract followed by the mascarpone cheese until the batter is smooth and creamy.
  5. Gently fold the dry ingredients into the wet mixture, being careful not to overmix. Once the flour is just incorporated, stir in the chopped pistachios, making sure to reserve a small handful for topping.
