- 1 cup granulated sugar
- ½ tsp baking soda

- Begin by preparing your loaf pan. Preheat the oven to 350°F (175°C) and take an 8×4-inch loaf pan, greasing it generously with butter or cooking spray. To further prevent sticking, line the bottom with parchment paper, allowing for easy removal once baked.
- In a medium bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk these dry ingredients together until well combined.
- In a large mixing bowl, beat the softened unsalted butter alongside the granulated sugar using an electric mixer or a whisk until the mixture becomes light and fluffy.
- Add the eggs to the butter and sugar mixture one at a time, ensuring each egg is fully blended before adding the next. Then, mix in the vanilla extract followed by the mascarpone cheese until the batter is smooth and creamy.
- Gently fold the dry ingredients into the wet mixture, being careful not to overmix. Once the flour is just incorporated, stir in the chopped pistachios, making sure to reserve a small handful for topping.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Sprinkle the reserved pistachios over the batter for a tasty crunch. Bake for 45-55 minutes.
- Once baked, remove the loaf from the oven and allow it to cool in the pan for about 10 minutes. Then transfer the loaf to a wire rack to cool completely before slicing.
