  • ½ teaspoon of refreshing mint extract
  • A small dab of green gel food coloring (optional, for a festive look)
  • 1 cup of juicy pomegranate arils

Instructions

  1. Begin by combining your finely crushed graham crackers, melted butter, and sugar in a mixing bowl. Use a spatula or your hands to mix the ingredients well until the mixture resembles wet sand and the crumbs are evenly moistened. This rich buttery blend will serve as the sturdy foundation for your cheesecake. Next, press this crumb mixture firmly into the base of small round molds or ramekins to form an even layer. You can use the back of a measuring cup or your fingers to get an even and compact base. Once pressed, place the molds in the refrigerator for about 30 minutes.
  2. While the base is chilling, it’s time to focus on the luscious cheesecake filling. In a large mixing bowl, beat the softened cream cheese and granulated sugar together using a hand mixer or stand mixer, until the mixture is creamy and free of lumps. Achieving a fluffy and smooth consistency is key for the best texture. Once well combined, add in the pure vanilla and refreshing mint extracts.
