Ingredients

  • 2 tablespoons olive oil or unsalted butter
  • 3 large leeks (white and light green parts only, thinly sliced)
  • 1 medium yellow onion (diced)
  • 4 cloves garlic (minced)
  • 45 medium Yukon Gold potatoes (peeled and diced)
  • 5 cups vegetable broth
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • Salt and black pepper to taste
  • 1/2 cup plant-based cream or heavy cream (optional)
  • 2 tablespoons chopped parsley
  • 2 green onions or scallions (sliced for garnish)
  • Crispy fried leeks or onions (optional topping)

Instructions

  1. Clean and prep the leeks.
  2. Sauté aromatics in olive oil or butter until soft.
  3. Add garlic and herbs; cook until fragrant.
  4. Add potatoes and broth; bring to boil then simmer.
  5. Blend until smooth or to desired texture.
  6. Stir in cream, season and simmer again.
  7. Serve garnished with parsley and crispy leeks.

Notes

For a thicker texture, blend only half of the soup and leave potato chunks intact.
