- Begin by combining the chilled mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, chopped green onions, garlic powder, salt, and black pepper in a large mixing bowl. Stir until all ingredients are well integrated.
- Using your hands or a spoon, form the potato mixture into small stick-like logs. Ensuring they are uniform in size will allow them to cook evenly.
- Prepare a coating assembly line. First, roll each log in the all-purpose flour, ensuring it is lightly covered. Next, dip each stick into the beaten eggs, then roll them in breadcrumbs to achieve an even coating.
- Heat oil in a skillet over medium-high flame. Carefully place each stick in the hot oil and fry them until they turn golden brown and crispy on all sides.
- Once golden, remove the sticks from the skillet and place them on paper towels to drain any excess oil. Serve them hot, enhancing their taste with your preferred dipping sauce.

Ensure mashed potatoes are well-chilled before using, as they hold shape better when cold. Control frying oil temperature to prevent sticks from browning too fast.
