  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 ½ cups shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, introduce the ground beef to the skillet. Allow it to cook for approximately 5–6 minutes until it turns a rich brown color and crumbles nicely. If there’s excess fat, carefully drain it off to keep the dish from being overly greasy.
  2. Add the chopped onion and minced garlic to the browned beef. Sauté them together for about 2 minutes or until the onion turns translucent and fragrant.
  3. Stir in the prepared diced potatoes along with the smoked paprika, dried oregano, salt, and black pepper. Cover and cook this mixture for about 12–15 minutes, stirring occasionally.
  4. Add in the diced red bell pepper and allow it to cook for an additional 3–4 minutes until it softens.
  5. Sprinkle a generous amount of shredded cheddar cheese evenly over your skillet’s contents. Cover again to let the cheese melt for about 2–3 minutes.
  6. Remove the skillet from the heat, sprinkle fresh chopped parsley over the top, and serve hot.

Notes

If you’re short on time, microwaving the potatoes for a few minutes before adding them to the skillet can significantly reduce your cooking time.
