- 1 lb ground beef
- 1/2 cup pumpkin puree
- 1/2 cup BBQ sauce (any favorite variety)
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 jalapeño, sliced (reserve some for garnish)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Start by preheating your oven to 400°F (200°C).
- In a large mixing bowl, combine all of your main ingredients: ground beef, pumpkin puree, BBQ sauce, breadcrumbs, egg, minced garlic, and jalapeño slices.
- Dust your hands with a little bit of flour or oil to prevent sticking, and use a spoon or your hands to scoop out portions of the mixture.
- Place the baking sheet in the preheated oven and bake the meatballs for about 20-25 minutes.
- While your meatballs are baking, grab a saucepan and heat your BBQ sauce over medium heat.
- Once the meatballs are fully cooked, take them out of the oven and immediately toss them in the warm jalapeño-infused BBQ sauce.
