Description
This delightful recipe is not only moist and warmly spiced but also captures the rich flavors that make this season special.
Ingredients
Scale
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ¼ teaspoon ground ginger
- 1 cup granulated sugar
- ½ cup brown sugar
- 1 cup pumpkin puree
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- ¾ cup chocolate chips or ½ cup chopped walnuts (optional)
Instructions
- Begin your baking journey by preheating your oven to 350°F (175°C). While the oven heats up, take a moment to grease your loaf pans or line them with parchment paper for easy removal later.
- In a large mixing bowl, combine your all-purpose flour, baking soda, salt, and the aromatic spices: cinnamon, nutmeg, cloves, and ginger. Use a whisk to ensure the dry ingredients are well blended.
- In another bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk together these ingredients until you achieve a smooth mixture.
- Carefully add the dry ingredient mixture to your wet ingredients. Stir gently with a spatula just until everything is well mixed; avoid overmixing.
- If you’re adding chocolate chips or walnuts, gently fold them into your batter.
- Divvy up your batter evenly between the two prepared loaf pans. Smooth the tops with a spatula. Then, pop them into your preheated oven and bake!
- After baking, allow your loaves to cool in the pans for about 10–15 minutes before transferring to a wire rack to cool completely.
