  • 1 cup pumpkin puree
  • 1 ½ cups sharp cheddar cheese, shredded
  • ½ cup parmesan cheese, grated
  • 1 ½ cups whole milk
  • 4 tablespoons butter
  • 1 teaspoon garlic powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Salt and pepper to taste
  • ½ cup breadcrumbs (optional)

Instructions

  1. Begin by bringing a large pot of salted water to a boil. Once boiling, add in the elbow macaroni and cook according to the package instructions until al dente. This usually takes about 8-10 minutes. After cooking, drain the pasta in a colander and set it aside, letting any excess water drip off. Ensure that the pasta is not overcooked, as it will continue to soften when mixed with the sauce.
  2. In a skillet, melt the butter over medium heat. As it starts to foam, add in the garlic powder, cinnamon, and nutmeg, stirring for about a minute until fragrant. This step is crucial, as it helps to bloom the spices and release their flavors. Next, fold in the pumpkin puree and milk, stirring until fully combined. Gradually add in the shredded sharp cheddar cheese, continuing to stir until the mixture is smooth and creamy. The cheese should fully melt and blend in, creating a luscious sauce.
  3. Once your sauce is bubbling and perfectly creamy, it’s time to combine it with the pasta. Pour the cooked macaroni into the skillet with the pumpkin cheese sauce. Mix thoroughly, ensuring all the pasta is fully coated in that delicious orange-hued sauce. If preferred, you can serve it at this stage for a creamier version, or you can opt to bake it for a crispy topping.
  4. If you decide to bake the dish, preheat your oven to 350°F (175°C) in advance. Transfer the pumpkin mac and cheese mixture into a greased baking dish. Sprinkle the grated parmesan cheese over the top, followed by optional breadcrumbs for that crispy texture. Place in the oven and bake for about 15-20 minutes, or until the top is golden brown and bubbling. Remove from the oven and let it cool slightly before serving.
