Delicious Pumpkin Pie Crumble Bars that are perfect for fall!


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and either grease a 9×13-inch baking dish with butter or line it with parchment paper for easy removal of the bars later.
  2. In a large bowl, combine the all-purpose flour, rolled oats, 1 cup of packed brown sugar, baking soda, and salt. Pour in the melted butter and stir with a fork or your hands until everything is well-mixed.
  3. Press half of the crumble mixture firmly into the prepared baking dish.
  4. In a separate mixing bowl, whisk together the pumpkin puree, granulated sugar, remaining 1/4 cup brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Carefully pour the pumpkin filling over the crumbled base, spreading it evenly to cover the entire surface. Top with the reserved crumble mixture.
  6. Bake in the preheated oven for 40-45 minutes or until the top is golden brown and the pumpkin filling has set.
  7. Allow to cool completely in the baking dish before slicing into squares.

Notes

For a gluten-free option, substitute the all-purpose flour with a gluten-free blend.
