Ingredients

  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup pumpkin purée
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1/4 cup unsalted butter, softened (for frosting)
  • 1 1/2 cups powdered sugar (for frosting)
  • 2 teaspoons espresso powder (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)
  • 12 tablespoons milk or cream (for frosting)

Instructions

  1. Whisk the dry ingredients together in a medium bowl.
  2. Cream the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add pumpkin purée, egg yolk, and vanilla extract, mixing thoroughly.
  4. Fold dry ingredients into wet until just combined.
  5. Chill the dough for at least 30 minutes.
  6. Preheat oven to 350°F (175°C) and prepare baking sheets.
  7. Scoop dough onto the sheets, spacing appropriately.
  8. Bake for 10–12 minutes or until set.
  9. Cool on baking sheets before transferring to a wire rack.
  10. Prepare frosting by beating butter, then adding other ingredients until smooth.
  11. Frost cookies once completely cooled.
  12. Enjoy or store in an airtight container.
