- 1 tablespoon espresso powder
- 3/4 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup pumpkin purée
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 1/4 cup unsalted butter, softened (for frosting)
- 1 1/2 cups powdered sugar (for frosting)
- 2 teaspoons espresso powder (for frosting)
- 1/2 teaspoon vanilla extract (for frosting)
- 1–2 tablespoons milk or cream (for frosting)
Instructions
- Whisk the dry ingredients together in a medium bowl.
- Cream the butter, brown sugar, and granulated sugar until light and fluffy.
- Add pumpkin purée, egg yolk, and vanilla extract, mixing thoroughly.
- Fold dry ingredients into wet until just combined.
- Chill the dough for at least 30 minutes.
- Preheat oven to 350°F (175°C) and prepare baking sheets.
- Scoop dough onto the sheets, spacing appropriately.
- Bake for 10–12 minutes or until set.
- Cool on baking sheets before transferring to a wire rack.
- Prepare frosting by beating butter, then adding other ingredients until smooth.
- Frost cookies once completely cooled.
- Enjoy or store in an airtight container.
