- 30 Gluten-free Golden Oreos (1 12oz package)
- 1.5 ounces dairy-free cream cheese, cut into small pieces
- 2 tablespoons canned pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1 9oz package dairy-free white chocolate chips
Instructions
- Begin by adding the entire package of Gluten-Free Golden Oreos into your food processor. Pulse the Oreos until they transform into fine crumbs.
- Next, to the Oreo crumbs in the processor, add the 1.5 ounces of dairy-free cream cheese, 2 tablespoons of canned pumpkin puree, and 1 teaspoon of pumpkin pie spice. Process these ingredients on high for about 1-2 minutes.
- Using your hands or a 1-tablespoon cookie scoop, take small portions and roll them into 1-inch balls. Place each ball on the prepared baking sheet lined with parchment paper.
- In a small saucepan, melt the dairy-free white chocolate chips over low heat, stirring consistently.
- After the truffles have cooled and firmed up, dip each truffle in the melted chocolate, fully coating it.
- Before the chocolate coating sets, sprinkle some pumpkin pie spice or crumbled Oreo cookies on top.
Notes
Ensure that the dairy-free cream cheese is soft enough to mix easily. The mixture can be stored in the fridge for a couple of days if you prefer to prep ahead of time.
