Description

These Quick Ground Turkey Meatloaf Muffins are quick, healthy, and loaded with flavor, making them a fantastic weeknight dinner.


Ingredients

  • 1 lb ground turkey (93% lean)
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground turkey, breadcrumbs, egg, chopped onion, minced garlic, Worcestershire sauce, Italian seasoning, salt, and black pepper. Mix these ingredients just until they’re combined.
  3. Use a spoon to divide the turkey mixture evenly into the prepared muffin tin cups.
  4. Top each muffin with about one tablespoon of marinara sauce.
  5. Place the muffin tin in the oven and bake for 20 to 22 minutes.
  6. Once finished baking, remove the muffin tin from the oven and sprinkle shredded mozzarella cheese on top of each muffin.
  7. Let the muffins rest for about 5 minutes before serving.

Notes

Leftover muffins can be stored in an airtight container in the refrigerator for up to 4 days.
