  • ¾ cup raspberry jam
  • ½ cup shredded sweetened coconut
  • ¼ cup brown sugar
  • ¼ cup all-purpose flour
  • 3 tablespoons butter, softened

Instructions

  1. In a mixing bowl, combine 1 cup of flour, ¼ cup of sugar, melted butter, and a pinch of salt to form a crumbly dough.
  2. Press a tablespoon of dough mixture into each muffin cup.
  3. Spoon a teaspoon of raspberry jam into each dough cup.
  4. In another bowl, mix shredded coconut, brown sugar, flour, and softened butter until crumbly, then sprinkle over each tartlet.
  5. Bake tartlets at 350°F (175°C) for 18-22 minutes until golden brown.
