- 1 cup finely chopped cooked corned beef
- 1 cup shredded Swiss cheese
- 3/4 cup sauerkraut, drained and squeezed dry
- 4 ounces cream cheese, softened
- 1/2 cup rye breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- Oil for frying (vegetable or canola)
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon pickle relish
- 1 teaspoon hot sauce
- 1/4 teaspoon garlic powder
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Combine the corned beef, Swiss cheese, sauerkraut, and softened cream cheese in a large bowl until well-blended.
- Transfer mixture to refrigerator for 20-30 minutes to firm up.
- Scoop portions and roll into uniform balls.
- Set up three shallow bowls: one for flour, one for beaten eggs, and one for a mix of rye breadcrumbs and panko.
- Roll each ball in flour, dip in eggs, and coat with breadcrumbs.
- Heat oil to 350°F (175°C) and fry the balls in batches for about 3-4 minutes each, turning to brown evenly.
- Drain on towel-lined tray and prepare the Spicy Thousand Island Sauce.
- Chill the sauce and serve with Reuben Balls.
Notes
These balls can be made in advance and frozen for convenience, frying directly from frozen when ready to serve.
