- 1 cup whole milk ricotta cheese
- 2 large eggs
- 1/2 cup vegetable oil or melted butter
- 1/3 cup milk
- Zest of 1 large orange
- 1/4 cup freshly squeezed orange juice
- 1 teaspoon vanilla extract
- 1 1/4 cups fresh or frozen cranberries
- 1 to 2 tablespoons coarse sugar, for topping (optional)
Instructions
- Start by preheating your oven to 375°F (190°C). Prepare your muffin tin by either lining each cup with paper liners or generously greasing them.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix the ricotta cheese, eggs, oil or butter, milk, orange zest, orange juice, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients; gently fold together until just combined.
- Fold in the cranberries gently.
- Divide the batter among prepared muffin cups, filling them about three-quarters full.
- Bake in the preheated oven for 18 to 22 minutes or until golden and a toothpick comes out clean.
- Let rest in the pan for 5 minutes, then transfer to a wire rack to cool.
