  • 1/3 cup milk
  • Zest of 1 large orange
  • 1/4 cup freshly squeezed orange juice
  • 1 teaspoon vanilla extract
  • 1 1/4 cups fresh or frozen cranberries
  • 1 to 2 tablespoons coarse sugar, for topping (optional)

Instructions

  1. Start by preheating your oven to 375°F (190°C). Prepare your muffin tin by either lining each cup with paper liners or generously greasing them.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix the ricotta cheese, eggs, oil or butter, milk, orange zest, orange juice, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients; gently fold together until just combined.
  5. Fold in the cranberries gently.
  6. Divide the batter among prepared muffin cups, filling them about three-quarters full.
  7. Bake in the preheated oven for 18 to 22 minutes or until golden and a toothpick comes out clean.
  8. Let rest in the pan for 5 minutes, then transfer to a wire rack to cool.
