Description
Roasted Beet & Blue Cheese Towers offer a delightful culinary experience that is equally simple to prepare and elegant in presentation.
Ingredients
Scale
- 3 medium beets, roasted & sliced into ½-inch rounds
- 1 large pear, thinly sliced
- ½ cup crumbled blue cheese
- ¼ cup toasted pecans, roughly chopped
- 1 tbsp honey
- 1 tbsp balsamic glaze
- 1 tbsp olive oil
- Fresh thyme sprigs, for garnish
Instructions
- Begin by preheating your oven to 400°F (200°C). Prepare the beets by wrapping them individually in foil, sealing tightly to lock in moisture. Place them on a baking sheet and roast for about 45–50 minutes or until they are tender when pierced with a fork. Allow them to cool enough to handle, then peel off the skins and slice into ½-inch thick rounds.
- Heat a tablespoon of olive oil in a sauté pan over medium heat. Add the thin slices of pear into the pan and drizzle with honey. Let the pears sauté for approximately 2 minutes on each side, or until they turn a beautiful golden hue and are caramelized to perfection. This step highlights the natural sweetness of the pears and creates a rich contrast to the bold blue cheese flavor.
- Start building each tower on a serving platter by stacking one slice of roasted beet as the base. Follow with crumbled blue cheese and a caramelized pear slice. Repeat this layering process and finish each tower with a dusting of blue cheese crumbles on top to create a tantalizing edible masterpiece.
- Finalize your presentation by sprinkling roughly chopped toasted pecans over the towers, adding a delightful crunch to each bite. Garnish with fresh thyme sprigs for added aroma and appeal. Just before serving, drizzle a thin stream of balsamic glaze over each tower for a touch of acidity that ties the flavors together beautifully.
Notes
For best results, choose beets that are equal in size for uniform roasting.
