Instructions
- Begin by preheating your oven to 400°F (200°C). Take your beets and wrap them individually in foil, placing them on a baking sheet. Roasting typically takes about 45 to 60 minutes, so patience is key to achieving the perfect fork tenderness. Once roasted, let the beets cool for 10 to 15 minutes before handling.
- With the beets now cooler, gently peel away the skins. This process is easier once the beets are adequately roasted and allowed to cool slightly. Dice them finely, as smaller pieces integrate better with the cheese, enhancing each slice’s visual appeal and flavor.
- In a mixing bowl, combine the softened goat cheese with lemon juice, garlic powder, and your choice of herbs, adding salt and black pepper to taste. If desired, this is where you can add chopped nuts or dried fruits for that optional texture and flavor enhancement.
- Spread a sheet of plastic wrap on your workspace. Spoon the cheese mixture onto the wrap, forming a rectangular shape. Evenly distribute the chopped beets over the cheese’s surface, ensuring the beets cover the entire rectangle.
- Carefully roll the cheese mixture into a log using the plastic wrap, pressing gently to hold the shape. Secure the ends and place the log in the refrigerator to chill for at least an hour. Chilling is essential to firm up the cheese, allowing for neat slices later.
- Once firm, remove the log from the fridge, unwrap it, and slice it into rounds. This appetizer pairs exceptionally well with crackers, toasted bread, or fresh veggie sticks.
