Ingredients

  • 4 medium russet potatoes, peeled and thinly sliced
  • 6 cloves roasted garlic, mashed
  • ¼ cup melted unsalted butter
  • ½ cup grated Parmesan cheese
  • 2 tsp fresh rosemary, finely chopped
  • 1 tsp fresh thyme, finely chopped
  • Olive oil, for drizzling
  • Salt and black pepper, to taste

Instructions

  1. Roast the garlic by cutting the top off the heads, drizzling with olive oil, wrapping in foil, and baking until soft.
  2. Mix melted butter, mashed garlic, rosemary, thyme, salt, and pepper in a bowl.
  3. Gently toss thinly sliced potatoes in the garlic-herb butter until coated.
  4. Layer potato slices into greased muffin tin cups, sprinkling Parmesan between layers.
  5. Drizzle oil on top and sprinkle additional Parmesan before baking until golden and crispy.
  6. Allow to cool briefly before serving, garnished with parsley.
