Instructions
- Roast the garlic by cutting the top off the heads, drizzling with olive oil, wrapping in foil, and baking until soft.
- Mix melted butter, mashed garlic, rosemary, thyme, salt, and pepper in a bowl.
- Gently toss thinly sliced potatoes in the garlic-herb butter until coated.
- Layer potato slices into greased muffin tin cups, sprinkling Parmesan between layers.
- Drizzle oil on top and sprinkle additional Parmesan before baking until golden and crispy.
- Allow to cool briefly before serving, garnished with parsley.
