All-In Roasted Mediterranean Veg with Feta

Description

A medley of vibrant vegetables with a salty, creamy touch from feta, perfect as a side or a main dish.


Ingredients

  • 1 courgette, chopped into chunks
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 1 red onion, cut into wedges
  • 1 small aubergine, diced
  • 2 garlic cloves, crushed (optional)
  • 2 tbsp olive oil
  • 1 tsp sweet smoked paprika
  • 1 tsp dried oregano
  • ½ tsp garlic salt
  • Cracked black pepper, to taste
  • 50g feta cheese, crumbled (for garnish)

Instructions

  1. Preheat your oven to 190–200°C.
  2. In a large bowl, toss the vegetables and garlic with olive oil. Sprinkle with paprika, oregano, garlic salt, and pepper. Ensure even coating.
  3. Spread seasoned vegetables in a single layer on a baking tray. Roast for 20–30 minutes, turning halfway, until tender and slightly charred.
  4. Remove from oven and sprinkle with crumbled feta while hot.

Notes

Ensure vegetables are chopped evenly for proper roasting. Watch for over-charring in the oven.
