A medley of vibrant vegetables with a salty, creamy touch from feta, perfect as a side or a main dish.
Ingredients

- 1 courgette, chopped into chunks
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 1 red onion, cut into wedges
- 1 small aubergine, diced
- 2 garlic cloves, crushed (optional)
- 2 tbsp olive oil
- 1 tsp sweet smoked paprika
- 1 tsp dried oregano
- ½ tsp garlic salt
- Cracked black pepper, to taste
- 50g feta cheese, crumbled (for garnish)
Instructions
- Preheat your oven to 190–200°C.
- In a large bowl, toss the vegetables and garlic with olive oil. Sprinkle with paprika, oregano, garlic salt, and pepper. Ensure even coating.
- Spread seasoned vegetables in a single layer on a baking tray. Roast for 20–30 minutes, turning halfway, until tender and slightly charred.
- Remove from oven and sprinkle with crumbled feta while hot.
Notes
Ensure vegetables are chopped evenly for proper roasting. Watch for over-charring in the oven.
