Ingredients

  • 10.5 ounces whole wheat penne
  • 2 cups diced chicken breast
  • 2 medium bell peppers (red and yellow), sliced
  • 1 medium red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon herbes de Provence

Instructions

  1. Preheat your oven to 400°F (200°C) and prep your ingredients.
  2. Drizzle olive oil over chicken and vegetables, toss to coat.
  3. Spread on a baking tray and roast for 20-25 minutes.
  4. Boil salted water, cook penne until al dente (8-10 minutes).
  5. Combine pasta with roasted chicken and vegetables, serve immediately.
