- 10.5 ounces whole wheat penne
- 2 cups diced chicken breast
- 2 medium bell peppers (red and yellow), sliced
- 1 medium red onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon herbes de Provence
Instructions
- Preheat your oven to 400°F (200°C) and prep your ingredients.
- Drizzle olive oil over chicken and vegetables, toss to coat.
- Spread on a baking tray and roast for 20-25 minutes.
- Boil salted water, cook penne until al dente (8-10 minutes).
- Combine pasta with roasted chicken and vegetables, serve immediately.
Notes
Make sure not to overcrowd the baking tray for even cooking.
