Description

Roasted Tomato Caprese Towers are visually stunning, delicious, and easy-to-make appetizers that feature layers of roasted tomatoes, mozzarella, and basil.


Ingredients

  • 45 large tomatoes, sliced into thick rounds
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • 8 oz fresh mozzarella, sliced
  • 12 ripe avocados, sliced (optional)
  • Fresh basil leaves
  • 1½ tbsp balsamic glaze
  • 1 tbsp olive oil (for drizzle)

Instructions

  1. Start by preheating your oven to 400°F (200°C). As it heats up, line a baking sheet with parchment paper.
  2. Once your oven is preheated, arrange the sliced tomatoes in a single layer on the prepared baking sheet. Mix together the olive oil, balsamic vinegar, dried oregano, garlic powder, salt, and pepper, and apply this mixture generously over each tomato slice.
  3. Place the baking sheet in the preheated oven and roast the tomatoes for about 20–25 minutes, or until edges are caramelized.
  4. While the tomatoes are roasting, slice your fresh mozzarella and any avocados. Rinse and dry the basil leaves.
  5. Begin layering your Caprese Towers by placing a slice of roasted tomato as the base, followed by mozzarella and avocado. Repeat the stacking for 2-3 layers, ending with a slice of tomato on top.
  6. Garnish with fresh basil leaves, drizzle with balsamic glaze and olive oil, and serve!
