Ingredients

- 2 medium zucchinis, sliced
- 1 red bell pepper, sliced
- 1 small red onion, sliced
- 1 can (400g) chickpeas, rinsed and drained
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- ½ cup crumbled feta cheese
- 1 tablespoon chopped parsley
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss zucchini, red bell pepper, red onion, and chickpeas with olive oil, oregano, smoked paprika, salt, and pepper.
- Spread on a baking sheet in a single layer.
- Roast for 25 to 30 minutes, tossing halfway through.
- Add crumbled feta and roast for another 5 minutes.
- Garnish with parsley and serve immediately.
Notes
Ensure chickpeas are well-rinsed and dried for best roasting results.
