Ingredients

  • 1 lb large shrimp, peeled & deveined
  • 1 cup fresh parsley, finely chopped
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 lime, juiced
  • 4 garlic cloves, minced
  • 1 tsp red pepper flakes
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. In a medium-sized bowl, combine the chopped parsley with olive oil, red wine vinegar, and lime juice. Add in minced garlic, red pepper flakes, and oregano, stirring until they are fully integrated. Season the mixture liberally with salt and pepper to accent the flavors. Allow the flavors to meld by setting the sauce aside as you prepare the shrimp.
  2. Place the peeled and deveined shrimp into a large bowl. Pour half of the prepared chimichurri over them, ensuring the shrimp are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to marinate, allowing the shrimp to absorb the flavors.
  3. Heat your grill or grill pan to medium-high, ensuring an even amount of heat. Lay the marinated shrimp onto the grill in a single layer. Cook them for 2 to 3 minutes on each side until they become opaque and achieve a perfect pink color, with slightly charred grill marks for added flavor.
  4. Arrange the grilled shrimp on a serving platter, and drizzle them generously with the remaining chimichurri sauce. Serve immediately while still hot, accompanied by your preferred sides for a wholesome meal.
