Ingredients

  • 4 medium zucchinis
  • 1 lb shrimp, peeled and deveined
  • 1 cup cream cheese, softened
  • ½ cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice zucchinis in half lengthwise and scoop out the centers.
  3. Heat olive oil in a skillet and sauté minced garlic until fragrant.
  4. Add shrimp and cook until pink and opaque, about 3 to 4 minutes.
  5. Mix shrimp with cream cheese and Parmesan until well combined.
  6. Spoon the shrimp mixture into the zucchini halves.
  7. Place stuffed zucchinis on a baking sheet and bake for 20 to 25 minutes.
  8. Garnish with fresh parsley and serve warm.
