- 4 medium zucchinis
- 1 lb shrimp, peeled and deveined
- 1 cup cream cheese, softened
- ½ cup grated Parmesan cheese
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Slice zucchinis in half lengthwise and scoop out the centers.
- Heat olive oil in a skillet and sauté minced garlic until fragrant.
- Add shrimp and cook until pink and opaque, about 3 to 4 minutes.
- Mix shrimp with cream cheese and Parmesan until well combined.
- Spoon the shrimp mixture into the zucchini halves.
- Place stuffed zucchinis on a baking sheet and bake for 20 to 25 minutes.
- Garnish with fresh parsley and serve warm.
