  • 2 cups romaine lettuce, chopped
  • 1 large tomato, diced
  • 1/2 cup Caesar dressing (store-bought or homemade)
  • 1/4 cup grated Parmesan cheese
  • Fresh lemon wedges, for serving

Instructions

  1. In a medium mixing bowl, combine the peeled and deveined shrimp with olive oil, smoked paprika, garlic powder, salt, and black pepper. Use your hands or a spoon to toss the shrimp until they’re evenly coated in the seasoning mix.
  2. Preheat your grill pan or outdoor grill to medium-high heat. Once hot, place the seasoned shrimp onto the grill and cook them for about 2–3 minutes on each side.
  3. Next, take your large flour tortillas and warm them in a dry skillet for approximately 20–30 seconds on each side. Lay each tortilla flat on a clean, dry surface. Spread a generous amount of Caesar dressing evenly across the surface of each tortilla, followed by a sprinkle of grated Parmesan cheese.
  4. Once your dressing and cheese are in place, layer your fresh ingredients by beginning with a handful of chopped romaine lettuce, followed by the diced tomatoes, and finally, the seasoned grilled shrimp. Fold in the sides of each tortilla, roll them tightly, and slice in half for serving.
