  • 3 cups diced russet potatoes
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1 can (10.5 oz) tomato soup
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 ½ cups shredded cheddar cheese
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp chili powder
  • 2 tbsp chopped fresh parsley (optional for garnish)

Instructions

  1. Begin by heating a skillet over medium heat. Add the ground beef and cook until browned, roughly 6 to 8 minutes. As the beef cooks, use a spatula to break it apart into smaller pieces. Once browned, drain any excess fat to make the dish healthier and more enjoyable. Season the cooked beef with salt, pepper, paprika, and chili powder to infuse robust flavors right from the start.
  2. While the beef is cooking, take this time to prep your vegetables. Peel the russet potatoes and cut them into bite-sized cubes. Next, dice the onion and mince the garlic.
  3. In your slow cooker, start layering the ingredients. Begin with half of the chopped potatoes followed by half of the browned beef. Then add in some diced onions, minced garlic, kidney beans, and diced tomatoes with their juices. Repeat the layers once more.
  4. Pour the creamy tomato soup evenly over the top of the layered ingredients.
  5. Cover your slow cooker and set it to cook on low for 7-8 hours or high for 4-5 hours.
  6. About 10 minutes before you’re ready to serve, sprinkle the shredded cheddar cheese generously over the casserole. Cover it once more and allow the cheese to melt.
  7. Once the cheese has melted, dish up the casserole and garnish with chopped parsley if desired. Serve hot.

Keep an eye on the cooking time, especially if using the high setting—overcooking can lead to mushy potatoes.
