- 2 lbs beef chuck, cut into large chunks
- 1 large onion, sliced
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons vegetable oil
- 2 tablespoons curry powder
- 1 tablespoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 can (14 oz) crushed tomatoes
- 1 cup beef broth
- ½ cup coconut milk or heavy cream
- Salt and black pepper, to taste

- Golden French fries
- Garlic naan
- Extra caramelized onions
Instructions
- Begin by heating the vegetable oil in a large skillet over medium-high heat. Add the pieces of beef to the hot skillet, browning on all sides for about 5-7 minutes. Transfer the beef into your slow cooker.
- In the same skillet, add the sliced onions and aim for deep caramelization, about 8-10 minutes. Once golden, toss in the minced garlic and grated ginger, cooking for 30 seconds until fragrant.
- Sprinkle curry powder, garam masala, ground cumin, and paprika into the onion mixture. Stir for about one minute, then pour in the crushed tomatoes and beef broth, scraping the skillet bottom for flavor.
- Transfer the mixture over the beef in the slow cooker. Cover and set the cooker to LOW for 7–8 hours or HIGH for 4–5 hours.
- About 20 minutes before serving, stir in your coconut milk or heavy cream and fold in the sliced red bell peppers. Adjust seasoning if needed before serving.

This curry can be made ahead of time and tastes better the next day. It freezes well, making it great for meal prep.
