S’mores Chocolate Chip Muffins

Delightful muffins that combine the nostalgia of campfire s’mores with the convenience of a warm, fluffy treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup graham cracker crumbs
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/2 cup plain Greek yogurt
  • 1/2 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips
  • 1 cup mini marshmallows, plus extra for topping
  • 2 graham crackers, crushed for garnish

Instructions

  1. Preheat your oven to 350°F. Prepare your muffin tin with liners or grease it.
  2. In a mixing bowl, combine flour, graham cracker crumbs, sugars, baking powder, baking soda, and salt. Whisk together.
  3. In another bowl, blend eggs, milk, Greek yogurt, melted butter, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir gently until combined.
  5. Fold in chocolate chips and mini marshmallows.
  6. Spoon the batter into muffin tins, filling them about 3/4 full. Top with more marshmallows and crushed graham crackers.
  7. Bake for 18–22 minutes. Test with a toothpick for doneness.
  8. Allow to cool for 5 minutes in the tin before transferring to a wire rack. Optionally, broil for a toasted effect.
