- 1 1/2 cups all-purpose flour
- 1 cup graham cracker crumbs
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup whole milk
- 1/2 cup plain Greek yogurt
- 1/2 cup unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- 1 cup mini marshmallows, plus extra for topping
- 2 graham crackers, crushed for garnish
Instructions
- Preheat your oven to 350°F. Prepare your muffin tin with liners or grease it.
- In a mixing bowl, combine flour, graham cracker crumbs, sugars, baking powder, baking soda, and salt. Whisk together.
- In another bowl, blend eggs, milk, Greek yogurt, melted butter, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir gently until combined.
- Fold in chocolate chips and mini marshmallows.
- Spoon the batter into muffin tins, filling them about 3/4 full. Top with more marshmallows and crushed graham crackers.
- Bake for 18–22 minutes. Test with a toothpick for doneness.
- Allow to cool for 5 minutes in the tin before transferring to a wire rack. Optionally, broil for a toasted effect.
