  • Author: Alioui

Description

These Soft Baked Cinnamon Pretzels blend the satisfying chewiness of traditional pretzels with the sweetness of cinnamon sugar, making them an irresistible choice for both kids and adults alike.

Ingredients

Scale
  • 1 1/2 cups warm water (110°F)
  • 2 1/4 teaspoons active dry yeast
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 2/3 cup baking soda
  • 10 cups water
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Start by combining the warm water with the active dry yeast and granulated sugar in a mixing bowl. Let it sit for about 5-10 minutes until it becomes frothy; this indicates that the yeast is active. Next, add the all-purpose flour and salt to the mixture. Stir until a soft dough begins to form, then knead the dough for about 5-7 minutes on a floured surface until it’s smooth and elastic. This process usually helps develop the gluten in the flour, giving the pretzels their chewy texture. Once kneaded, place the dough in a greased bowl, cover it with a clean towel, and let it rise in a warm place for about 30 minutes, or until it has doubled in size.
  2. Once your dough has risen, it’s time to shape your pretzels. Punch down the dough to release any air and turn it out onto a lightly floured surface. Divide the dough into 8 equal pieces. Roll each piece into a long rope, about 24 inches in length. To form the pretzel shape, create a U with the rope, then cross the ends over each other and twist them before pressing them down onto the bottom of the U to secure the shape. Place the shaped pretzels onto a baking sheet lined with parchment paper, allowing space between each pretzel for rising.
  3. This stage is essential for achieving that signature pretzel texture. In a large pot, combine the 10 cups of water with 2/3 cup of baking soda and bring it to a vigorous boil. Preheat your oven to 425°F (220°C) while you prepare to boil the pretzels. Carefully drop each pretzel into the boiling water, one at a time, for about 30 seconds. This boiling step is crucial as it helps give the pretzels their unique texture and color. After boiling, use a slotted spoon to remove them from the pot and place them back on the baking sheet.
  4. Once your pretzels are ready to go, it’s time for the final touch before oven time. Brush each pretzel with the melted butter and then sprinkle them generously with the cinnamon sugar mixture (mix together the remaining granulated sugar and ground cinnamon beforehand). Place the baking sheet into the preheated oven and bake the pretzels for 12-15 minutes or until they achieve a golden-brown color. When they come out of the oven, you can brush them with a little more melted butter for an extra touch of flavor. Serve warm, and enjoy the compliments!

Notes

Ensure that your water is at the correct temperature (110°F) when activating the yeast. Too hot can kill the yeast, while too cool won’t activate it properly. Allow enough time for the dough to rise; this step is critical for creating light, fluffy pretzels. Keep an eye on the pretzels while they are baking to ensure they do not get too dark. These pretzels are best enjoyed fresh but can also be stored in an airtight container at room temperature for 1-2 days.
