This Soft Cheesy Onion Bread combines the rich flavors of caramelized onions and melted cheese for a truly irresistible treat.

- 2 ½ cups all-purpose flour
- 1 cup warm water
- 1 tablespoon sugar
- 2 teaspoons active dry yeast
- 1 teaspoon salt
- 2 tablespoons olive oil
- 2 medium yellow onions, sliced
- 1 cup cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 2 tablespoons fresh chives (optional)
Instructions
- In a large mixing bowl, combine the warm water with sugar and active dry yeast. Stir gently and allow to sit for about 5 to 10 minutes until foamy.
- Add flour and salt to the yeast mixture, stir until combined, then knead in the olive oil for about 8 to 10 minutes.
- Let the dough rise in a warm spot for about 1 hour until doubled in size.
- Caramelize onions in olive oil over medium heat for 20 to 30 minutes.
- Punch down the dough, roll it out, spread caramelized onions, and sprinkle cheese over it.
- Roll the dough up, place in a greased dish, and let rise again for 30 minutes.
- Preheat oven to 375°F (190°C) and bake for 25 to 30 minutes until golden brown.
Notes
Ensure water is warm, not hot, to activate yeast. Store leftovers in an airtight container.
