    • ¼ cup sliced black olives
    • ½ cup diced cooked grilled chicken

Instructions

  1. Begin by chopping the spinach into small, manageable pieces. This not only helps in even cooking but also makes folding the tortillas a breeze. Crumble the feta cheese by hand or using a fork, ensuring it becomes fine and evenly spreadable. If using optional add-ins like sun-dried tomatoes, black olives, or grilled chicken, prepare these by chopping or slicing as needed. This sets the stage for a perfect assembly.
  2. Lay a tortilla flat on a clean surface. Spread a generous portion of chopped spinach and feta cheese over one half of the tortilla. If you’re feeling adventurous, add your optional ingredients to the mix for a flavor twist. Fold the tortilla in half, gently pressing to secure the ingredients inside. Repeat this process with the remaining tortillas.
  3. Heat a skillet over medium heat, adding a hint of olive oil or butter to prevent sticking while adding a depth of flavor. Once the skillet is sufficiently hot, carefully place a folded quesadilla into it. Let it cook for about 2–3 minutes on each side or until the tortillas take on a lovely golden hue and crisp texture.
