Delicious Spinach and Potato Casserole

Description

This spinach and potato casserole combines comfort, flavor, and nutrition in one dish.


Ingredients

  • 4 medium potatoes, peeled and sliced or cubed
  • 1 onion, chopped
  • 250 g spinach, roughly chopped
  • 4 eggs
  • 100 g soft cream cheese
  • 150 g mozzarella cheese, grated
  • 2 tbsp olive oil
  • ½ tsp dried ground garlic
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Add the sliced or cubed potatoes into a pot of salted water and boil for 8–10 minutes. Strain and set aside.
  3. Warm your skillet, drizzle olive oil, and cook the chopped onions for 3–4 minutes. Add the chopped spinach, dried garlic, salt, and pepper.
  4. In a mixing bowl, whisk the eggs and soft cream cheese until smooth. Stir in half of the grated mozzarella.
  5. Layer the sliced potatoes, spinach-onion mixture, and egg-cheese mix in a greased baking dish, topping with the rest of the mozzarella.
  6. Bake in the preheated oven for 25 to 30 minutes.

Notes

Let the casserole cool for at least 5 minutes before serving.
