Description
This spinach and potato casserole combines comfort, flavor, and nutrition in one dish.
Ingredients

- 4 medium potatoes, peeled and sliced or cubed
- 1 onion, chopped
- 250 g spinach, roughly chopped
- 4 eggs
- 100 g soft cream cheese
- 150 g mozzarella cheese, grated
- 2 tbsp olive oil
- ½ tsp dried ground garlic
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Add the sliced or cubed potatoes into a pot of salted water and boil for 8–10 minutes. Strain and set aside.
- Warm your skillet, drizzle olive oil, and cook the chopped onions for 3–4 minutes. Add the chopped spinach, dried garlic, salt, and pepper.
- In a mixing bowl, whisk the eggs and soft cream cheese until smooth. Stir in half of the grated mozzarella.
- Layer the sliced potatoes, spinach-onion mixture, and egg-cheese mix in a greased baking dish, topping with the rest of the mozzarella.
- Bake in the preheated oven for 25 to 30 minutes.
Notes
Let the casserole cool for at least 5 minutes before serving.
