- Toothpicks or kitchen twine, to hold the pinwheels
Instructions
- Prepare the Spinach & Feta Filling by heating olive oil in a skillet, adding garlic, and cooking until fragrant. Stir in spinach and cook until wilted. Combine with feta, cream cheese, lemon zest, lemon juice, and dill.
- Prep the Salmon Fillet by slicing it horizontally and seasoning with salt and pepper.
- Assemble the Pinwheels by spreading the filling on the salmon, rolling it tightly, and securing with toothpicks.
- Bake the Pinwheels in a greased baking dish at 375°F for 15-18 minutes until cooked through.
- Serve & Enjoy with garnishes like fresh dill or lemon juice.
