Ingredients

  • 2 cups fresh spinach, chopped

  • 2 tablespoons cream cheese, softened
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon dried dill (or 1 teaspoon fresh dill)
  • Salt and pepper, to taste
  • Toothpicks or kitchen twine, to hold the pinwheels

Instructions

  1. Prepare the Spinach & Feta Filling by heating olive oil in a skillet, adding garlic, and cooking until fragrant. Stir in spinach and cook until wilted. Combine with feta, cream cheese, lemon zest, lemon juice, and dill.
  2. Prep the Salmon Fillet by slicing it horizontally and seasoning with salt and pepper.
  3. Assemble the Pinwheels by spreading the filling on the salmon, rolling it tightly, and securing with toothpicks.
  4. Bake the Pinwheels in a greased baking dish at 375°F for 15-18 minutes until cooked through.
  5. Serve & Enjoy with garnishes like fresh dill or lemon juice.
