St. Lucia Saffron Buns are a delightful culinary treat known for their soft texture and unique saffron flavor.

- 1 gram saffron threads
- 1 cup whole milk
- 2 1/4 teaspoons active dry yeast
- 1/2 cup granulated sugar
- 4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup raisins
- 1 egg (for egg wash)
- Optional pearl sugar for topping
Instructions
- Start by warming the milk until it is lukewarm and add saffron to steep for 10–15 minutes.
- In a mixing bowl, combine the saffron-infused milk with sugar and yeast, letting it sit until foamy.
- Add the remaining sugar, melted butter, eggs, and salt, then gradually incorporate flour to form a soft dough.
- Knead the dough until smooth and elastic, about 7–10 minutes.
- Let the dough rise in a greased bowl covered with a towel for about 1 hour.
- Punch down the dough, divide and shape each piece into “S” twists or figure-eights.
- Let the shaped buns rise covered for an additional 30–45 minutes.
- Brush with beaten egg and bake at 375°F (190°C) for 15–18 minutes until golden brown.
- If desired, sprinkle with pearl sugar while warm before serving.
Notes
If not serving immediately, these buns can be frozen for up to two months. Reheat before serving.
