- 2–3 pounds chuck steak, cut into large pieces
- 4 large carrots, peeled and thickly sliced
- 6 medium Yukon Gold potatoes, quartered
- 2 cups mushrooms, sliced
- 1 large yellow onion, chopped
- 4 cloves garlic, minced
- 3 cups low-sodium beef broth
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons cornstarch
- 2 tablespoons water
- Fresh parsley for garnish
- Crusty bread for serving (optional)
Instructions
- Begin by preparing your tools and preheating your crockpot to low. Heat your skillet over medium-high heat and add a touch of oil. Once the skillet is hot, add the chunks of chuck steak, searing them for 2–3 minutes on each side until they are a rich brown color.
- Now that your steak is in the crockpot, it’s time to add the vegetables. Layer in the thick slices of carrots, quartered Yukon Gold potatoes, sliced mushrooms, chopped onion, and minced garlic on top of the steak.
- In a separate bowl, take the 3 cups of low-sodium beef broth and mix it with the tomato paste, Worcestershire sauce, Italian seasoning, salt, and pepper. Stir well to combine all the ingredients into a cohesive mixture, then pour this sauce over the contents in the crockpot.
- Gently stir the ingredients to ensure that the meat is mostly submerged in the liquid. Cover the crockpot and cook on low for 8 hours or on high for 4-5 hours.
- As your cooking time nears its end, mix 2 tablespoons of cornstarch with 2 tablespoons of water to create a slurry. About 20-30 minutes before you’re ready to serve, stir this mixture into the crockpot.
- Once your cooking time is up, dish out portions into bowls and garnish with fresh parsley for color and added flavor.
