- 1 bunch broccolini, ends trimmed
- 1 large sweet potato, peeled and chopped into chunks
- 1 medium red onion, cut into wedges
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons pomegranate seeds
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 2 tablespoons water
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. In a large mixing bowl, combine the chopped sweet potato chunks and red onion wedges. Drizzle with 1 tablespoon olive oil and season with salt and pepper. Toss until evenly coated.
- Spread the vegetables in a single layer on the baking sheet and roast for 20 to 25 minutes until golden and tender. Stir halfway through for even cooking.
- Heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Add the broccolini and stir-fry for 5 to 7 minutes until slightly charred. Add minced garlic in the last minute of cooking.
- In a small bowl, combine tahini, lemon juice, water, and a pinch of salt and pepper. Whisk until smooth.
- In a serving bowl, layer the roasted sweet potatoes and red onions, followed by stir-fried broccolini. Drizzle with tahini sauce and sprinkle pomegranate seeds on top.
Notes
Adjust the tahini in the dressing to taste. Fresh lemon can be squeezed right before serving for brightness.
